Ingredients
2 c. heavy cream
1/2 c. cocoa powder
1 box yellow cake mix, plus ingredients called for on box
1 tsp. pure vanilla extract
3 c. milk
1 tbsp. instant coffee
2 boxes vanilla pudding mix
2 tbsp. sugar
pinch of kosher salt
1/4 c. chocolate shavings
Cooking spray, for pan
Directions
- Preheat oven to 350º and grease and flour a 9″-x-13″ cake pan. Prepare yellow cake mix according to box instructions. Pour batter into prepared pan and bake until a toothpick inserted in the center comes out clean, about 25 minutes. Let cool 10 minutes.
- Meanwhile, prepare pudding: In a large bowl or measuring cup, whisk instant espresso into milk. In a large bowl, whisk together pudding packets and coffee flavored milk until thick. Set aside.
- In another large bowl, beat cream, sugar, vanilla and a pinch of salt until stiff peaks form. Set aside.
- Using the bottom of a wooden spoon, poke holes all over the cake. Spread pudding mixture on top, making sure to fill poke holes. Top with whipped cream and a dusting of cocoa powder. Sprinkle with chocolate shavings and serve.
