2 large eggs
1 1/4 tsp. baking powder
1/2 tsp. kosher salt
1 tbsp. pickle juice
1 tbsp. sugar
2 tbsp. chopped fresh dill
1 3/4 c. all-purpose flour
1/2 c. sour cream
1/2 c. vegetable oil
1/2 c. chopped pickles
1/2 c. shredded cheddar
- Preheat oven to 350°. Line a 9″-x-5″ loaf pan with parchment paper.
- In a large bowl, add together sour cream, vegetable oil, eggs, and sugar; whisk the mixture until smooth. An then, add flour, baking powder, salt, and pickle juice; stir until combined. Fold in chopped pickles, cheddar, and dill. Pour batter into loaf pan.
- Bake until the bread is golden. Inserted a toothpick into the middle of the loaf comes out clean, 40 minutes. Cool completely before slicing. Ready for serving!
